I once microwaved a full container of sour cream because I was making a “gourmet” nacho bar at 11 PM. I forgot to stir it. The microwave dinged, and I opened the door to find what looked like a foamy, yellow tide pool. My nachos wept.
I salvaged it by whisking in a splash of milk and a prayer, but I learned my lesson. The container stays cold. The portion goes in the bowl. And if you mess it up, just call it “artisanal crème fraîche” and nobody will question your life choices.
When You Should Absolutely Not Even Try
There are moments when the microwave should be condemned to the garage. If your sour cream is going into a sauce that will sit on the stove for more than a minute, forget it. It will curdle faster than you can say “lactose tolerance.”
The same goes for leftover creamy soups that have sour cream in them. Reheating them in the microwave is like trying to revive a wilted rose with a blowtorch. Use a double boiler, or just accept that yesterday’s soup is best eaten cold and defiant.
